If you know me at all, you know that I am a dessert junkie! I would skip breakfast, lunch and/ or dinner in favor of a sweet treat. I am not much of a chocolate fan, and a slice of chocolate cake or a brownie doesn't even tempt me. But a cupcake, lemon meringue or key lime pie and strawberry shortcake are the death of me!
My newest dessert junkie love~ Rice Crispy Treats with Tiger Butter! If you frequent Rocky Mountain Chocolate Factory {one of my fave dessert stores!} you may be familiar with the Tiger Butter combo of white chocolate and peanut butter mixed together until smooth and creamy. Imagine that on top of traditional Rice Crispy Treats and its a match made in sugary confection heaven!
RECIPE:
Rice Crispy Treats
1/4 cup butter
6 cups Mini Marshmallows
6 cups Rice Crispy Cereal
Melt butter in a saucepan over low heat. Add marshmallows and stir constantly until completely melted. Remove from heat. Add Rice Crispy Cereal and stir until well coated. Spread mixture into a 9x13 pan and let cool. Eat whatever is left on the spoon :)
Tiger Butter
1 package White Chocolate Chips
1 large tbsp of Peanut Butter
You should use a double broiler to melt the white chocolate chips and peanut butter, but I am impatient so I just lift the pan a little off of the heat and call if the same. Place peanut butter in a small saucepan over low heat. Add the white chocolate chips and stir until melted and completely smooth. Pour mixture evenly over the top of the Rice Crispy Treats and let it cool.
*Tip*
If the white chocolate peanut butter mixture starts to seize, add a tiny bit of cooking oil to it and stir. Should smooth it out nicely.
Voila'.. Try not to become addicted!
